Lemon Sole with Parmesan (serves 2)

Ingredients:Lemon Sole with Parmesan

2 Lemon sole fillets
Half a glass of white wine
Parmesan cheese
Knob of butter
Sea salt

(1) Take a baking sheet that has a raised lip around the edges so that any liquor will not spill and grease using the butter

(2) season the fish with the sea salt and place skin side down on the baking sheet

(3) pour the wine around the fish but not on the fillets and grate the parmesan over the fish until it is covered in a fine dusting

(4) bake in a pre heated oven for 15 minutes at 180 degrees and serve with vegetables

This dish also works well with other fish such as Plaice and Haddock
